Vinification: Hand-harvested in small 20 kg boxes to respect the grapes. Destemmed and lightly crushed, indigenous yeasts, 20 days of maceration in stainless steel tanks. Malolactic fermentation in barrels
Aging: 12 months in demi-muids and barrels
