Vinification: Hand-harvested in small 20 kg boxes to respect the grapes. Whole clusters pressed after 12h in a cold room to bring the grapes down to 6°C for better settling. Indigenous yeasts. Alcoholic and malolactic fermentation in barrels
Aging: 12 months in first-fill demi-muids
